Low Calorie S’mores Brownies

Whenever I want a chocolate dessert that feels like a real bakery treat, I usually bake a batch of brownies.

Traditional brownies can be very heavy on sugar and butter, which often leaves me looking for a lighter option that still tastes rich.

Easy homemade low calorie s'mores brownies

That is why I created these low calorie s’mores brownies. They give you that classic campfire flavor with soft marshmallows, crunchy graham crackers, and melty chocolate.

The base stays fudgy by using Greek yogurt and a simple sugar alternative, so you get a deep chocolate flavor without all the extra calories.

You can mix the batter and bake them in under half an hour, making them a great everyday treat when you want something sweet.

Why I Love This Recipe

Classic Campfire Flavor – You get the nostalgic taste of toasted marshmallows, crisp graham crackers, and rich chocolate in every bite.

Incredibly Fudgy Texture – Nonfat Greek yogurt keeps the brownie center super rich and moist without adding heavy oils or fats.

Cuts Out Sugar – Granulated monk fruit sweetener provides all the sweetness you want without the extra calories from sugar.

High Protein Boost – The Greek yogurt and eggs naturally bump up the protein to keep you feeling satisfied for longer.

Ingredient List

For the Brownies

  • 1/2 cup Plain Nonfat Greek Yogurt
  • 2 Large Eggs
  • 2 tbsp Melted Butter
  • 2/3 cup Granulated Monk Fruit Sweetener
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/2 cup All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt

For the S’mores Topping

  • 1 cup Mini Marshmallows
  • 3 Graham Cracker Sheets, broken into small pieces
  • 2 tbsp Mini Chocolate Chips

How to Make It

Step 1

Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.

Step 2

In a large bowl, whisk the Greek yogurt, eggs, melted butter, monk fruit sweetener and vanilla until smooth.

Step 3

Add the cocoa powder, flour, baking powder and salt. Fold just until combined, then spread the batter evenly into the pan.

Step 4

Bake for 20-22 minutes, until the top is set and a toothpick inserted in the center comes out with moist crumbs.

Step 5

Remove the pan from the oven and scatter the mini marshmallows, graham cracker pieces and mini chocolate chips evenly over the top.

Step 6

Return to the oven for 3-4 minutes until the marshmallows are puffed and soft. For golden toasted tops, switch the oven to broil for 30-60 seconds, watching the whole time because marshmallows go from golden to burnt very fast.

Step 7

Cool in the pan for at least 30 minutes so the marshmallow sets, then cut into 16 squares.

Tips

Bring the Yogurt and Eggs to Room Temperature

If your yogurt and eggs are cold from the fridge, they will cause the melted butter to harden immediately when mixed. This leaves you with little solid butter bits instead of a smooth batter.

I recommend setting your yogurt and eggs on the counter for about twenty minutes before you start mixing.

If you are short on time, place the eggs in a bowl of warm tap water for five minutes to take the chill off quickly.

Sift the Cocoa Powder First

Cocoa powder loves to clump together into tiny dry balls that are difficult to whisk away.

In a low-calorie batter like this, stirring too much to break up clumps will make the flour develop extra gluten. That turns your brownies gummy and tough instead of tender.

I’ve found that sifting the cocoa powder through a fine mesh strainer guarantees a silky batter without any extra stirring.

Do Not Wait for a Clean Toothpick

Because this batter relies on Greek yogurt instead of lots of oil or butter, it dries out very fast if it stays in the heat too long.

You’ll get the best results if you pull the pan out when the toothpick still has a few moist, sticky crumbs clinging to it.

If the toothpick comes out completely clean, the brownies will lose their fudgy bite and turn dry once they cool down.

FAQs

How can I slice these brownies cleanly without the marshmallows sticking to the knife?

Lightly coat a sharp knife with nonstick cooking spray or dip the blade into warm water before making each cut.

Wiping the knife clean between every slice will help keep the tops neat and prevent the melted marshmallow from dragging across the squares.
